Ingredients
- 2 Lbs Beef (could easily do more) – The “stew meat cubes” from the store works well, otherwise chuck or round roast, cut into ~ 1inch cubes.
- ~1 Tbs olive / vegetable oil
- Lawry’s Seasoning salt
- Adobo Seasoning
- Crushed red pepper / similar seasoning
- Lime / Lime juice
- Garlic
- Salsa (or 1/2 C Beef stock)
- Fajita veggie mix (onions, bell peppers, jalapenos, etc.)
- Lettuce, rice, tomatoes, cheese, etc. for toppings
- Tortilla’s
Instructions
- Cube the beef, if needed.
- Mix the dry seasonings together
- coat beef cubes with dry seasonings and garlic
- Set to sear / saute (Foodi High, Instapot normal)
- Once warm add oil – enough to help brown the meat – doesn’t have to be 1Tbs – more or less is OK.
- Once oil is warm add beef cubes, turning them to brown evenly on each side
- Add Lime juice
- Add salsa or beef stock.
- pressure cook on High (both machines) for 55 minutes.
- Once done slow or fast release pressure (there is usually a lot of juice, so I suggest a fast release and lid removal)
- open lid and shred the beef with tongs (rubber coated for foodi)
- set to saute (med for foodi, low for instapot)
- add fajita veggies
- stir and allow to cook
- serve as taco’s with toppings etc…
